It is Esther Joseph's passion to share the nostalgia and her St. Lucian culture with Asheville and all those that visit. The menu combines what Esther considers to be traditional St. Lucian dishes, triggering memories from her childhood, and creative recipes crafted by Chef Nigel Lawrence.

Esther states: "It's important to balance the enjoyment of tasty foods and eating healthy. Soul food shouldn't kill you. That's why salads are so important in St. Lucian cuisine. Our St. Lucian term, "food on a plate", is actually a reference to the sides that come with the island's main dishes. In St. Lucia, it's typically cucumber, tomato...and avocado salads are always served on the side, as well as fiber and nutrient rich yams and sweet potatoes."

The national dish of St. Lucia is green banana and saltfish. However, in general, the cuisine in St. Lucia is a blend of West African, European (due to its British and French roots), and East Indian cuisine. Typical essential food stuffs are onions, potatoes, celery, cornmeal, coconut milk, the very hot scotch bonnet peppers, flour, and thyme.

Another famous dish in the island is the bouyon, a meal with meat, plantains, dasheen, yam, and dumplings. British influence is noted in a variety of spices used in its cuisine. Among the most famous British ingredients are garlic, cinnamon, nutmeg, cocoa, cloves, parsley and others. The St. Lucian roti is one of the most famous and delicious dishes on the island as well. This Indian flatbread is wrapped around curried chickpeas and goat, chicken or beef, and vegetables.
There are many dynamic dishes such as rice and peas, stewed chicken, macaroni pie, and every kind of dish containing fish and locally produced vegetables. Esther moved to Asheville in 2011 and bought a small farm in Candler where she develops her green thumb for a truly farm to table experience for us all to enjoy. Even the ingredients which are used to make the cocktails are mostly fruits, such as mango, banana, coconut, pineapple, lime and cranberry.

Esther's passion for providing patrons with an authentic St. Lucian experience has even led to the introduction of a Food Tour to St. Lucia. The restaurant is offering an opportunity to travel with her and Chef Nigel to her home country of St. Lucia on March 19th. The group will sample delicious foods, enjoy evening cocktails, visit local markets, and get a hands-on cooking lesson with one of the area's finest cooking schools.
